Why Korean families serve so many side dishes with every meal

At first glance, a Korean dining table can look extravagant, but appearances can be deceiving. Each side dish is served in modest portions, allowing diners to enjoy a remarkable range of flavours without eating oversized servings.

A spoonful of rice paired with spicy kimchi might be followed by mild spinach, sweet soy-glazed potatoes and savoury mushrooms. The constant contrast keeps every bite interesting, proving that variety doesn’t require a lavish banquet.

That is perhaps the real secret behind Korea’s famous side dishes. They aren’t there to overwhelm the meal but to complete it. Together, they turn even the simplest bowl of rice into something comforting, colourful and deeply satisfying, reminding us that sometimes the smallest dishes carry the richest traditions.
